Course Description

This programme integrates restaurant management theory with practice. It has been developed to provide a relevant professional qualification for those who wish to embark on a career in Restaurant Management. The programme will provide the participant with the benefits of operational, interpersonal and conceptual skills. Students are afforded the opportunity to complement college-based-learning with a structured placement under the guidance of an industry mentor.

The course will provide a springboard to a range of career opportunities within the restaurant industry. Students graduating from this programme will have developed a range of competencies enabling them to excel as a restaurant supervisor/assistant manager. Applicants must possess a mature outlook, a passion for the business of restaurants and the drive and capability to pursue a career in the restaurant industry at management level.

Who Should Apply

Mature learners and/or Career changers with a passion for the restaurant sector who have a genuine interest in the area.

Subjects Semester 1:

  • Fundamentals of Restaurant Operations including Financial Management and Costings
  • Beverage Management
  • Restaurant Services Marketing
  • Human Resource Management for Food and Beverage Enterprises
  • Management for Food and Beverage Enterprises

Subjects Semester 2

  • Fundamentals of Restaurant Management
  • Restaurant Design and Control
  • Leadership for Food and Beverage Enterprise
  • Oenology
  • Food and Energy Sustainability in the Hospitality industry

Subjects Semester 3

  • Work Placement

This immersion style programme comprises of two twelve week college based semesters. Students attend college three days per week, Monday to Wednesday, 9.15am- 5.15pm allowing for the opportunity to continue working in industry Thursday to Sunday or alternatively complete the work placement during the summer.
